| Abstract;The trend pursuiing after the safety of foods is enhancing among the consumers of all over the world by a chance of bovine spongiform encephalopathy matter, etc.From this background an international standard plan "food safety management system" ISO/FDIS 22000:2004 has appeared to be applied to whole food related enterprises ( food chain ), and it will come to Japanan as a ISO standard early this summer. The article explains management systems,construction of HACCP system, food safety management manual which guarantee the safety and confidence of foods, etc. |
