Abstract;Less-sodium soy sauce containing .GAMMA.-aminobutyric acid (GABA) is the novel food which is developed by using Lactobacillus isolated from miso (soybean paste), moromi mash for soy sauce making, or raw soy sauce. We investigated the hypotensive effects and safety of the less-sodium soy sauce containing GABA in a double-blind, placebo-controlled, parallel group study. The subjects were 84 adults with high-normal blood pressure (male/female=44/40, systolic/diastolic blood pressure=134.7.+-.7.6/82.4.+-.5.6mmHg) and 77 adults with mild hypertension (male/female=42/35, systolic/diastolic blood pressure=145.6.+-.10.6/88.7.+-.7.1mmHg), who were not yet on medication. These subjects were divided into three groups. The test group was given less-sodium soy sauce containing 120mg of GABA once daily for 12 weeks. And two control groups were given less-sodium soy sauce without GABA or regular soy sauce without GABA. The results revealed that the systolic blood pressure was significantly lower in the test group at 12 weeks compared with the regular soy sauce group. Furthermore, the absolute reduction in systolic blood pressure 12 weeks after the start of intake was significantly larger in the test group than in other two groups (.DELTA. systolic/diastolic BP=-2.2.+-.9.8/-0.9.+-.6.7mmHg in test group, 1.6.+-.9.9/1.1.+-.7.5 in less-sodium soy sauce group, 2.3.+-.12.8/0.9.+-.8.2mmHg in regular soy sauce group). Any abnormal changes in clinical findings such as pulse rate, urinalysis and physical examination were not observed. These results demonstrated the safety as well as efficacy of the less-sodium soy sauce containing GABA, which moderately reduced the blood pressure in subjects with high-normal blood pressure and mild hypertension.
