Abstract;This paper describes a developed sanitary washing machine for leafy green vegetables. The types of vegetables are listed. Leafy green vegetables are most difficult to wash. Five conditions in washing them are explained. General washer using ultrasonic wave is explained and cuticle of leafy green vegetavles is described. The relation between the characteristics of leafy green vegetables and processing and the relation between the ingredients of leafy green vegetables and processing are explained. A machine using a fluid swirl regulating mechanism for washing vegetables and mixing is explained. Leafy green vegetables can be washed without destruction by this method.
